Kumas No. 2 (Savory Semolina Cake)
This savory variation of the traditional Parsi Kumas is a semolina-based bread-cake with a rich, buttery crumb and a golden crust. Fermented to achieve a light, porous texture, the dough is infused with ghee and topped with aromatic caraway and poppy seeds for a delightful crunch. Best enjoyed warm from the oven, this substantial loaf makes an excellent accompaniment to afternoon tea or savory stews.
Semolina Khaja
These traditional Semolina Khajas are flaky, multi-layered pastries that exemplify the artistry of historical Gujarati confectionery. Made from a stiff semolina dough that is laboriously beaten to achieve elasticity, the pastry is layered with ghee to create distinct, crispy flakes similar to a croissant. Deep-fried to a golden crisp in pure ghee, these savory-salty treats offer a rich, buttery texture that shatters delightfully with every bite.
Semolina Kheer (Rava Kheer)
This traditional Gujarati dessert transforms simple semolina into a rich, aromatic pudding infused with the floral scent of rose water and warming spices. Fine wheat rava is slow-cooked in water until tender, then simmered with milk and sugar to create a creamy, comforting texture that melts in the mouth. Finished with a garnish of ghee-fried almonds and raisins, it offers a delightful crunch against the smooth sweetness of the kheer.
Instructions
- 1In a saucepan, bring the milk to a boil over medium heat. Add salt.
- 2Reduce heat to low. Using a wooden spoon and stirring constantly, slowly add the semolina flour little by little. Cook for 10 minutes, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
- 3Remove from heat and quickly mix in the egg until fully incorporated. Work quickly to prevent the egg from scrambling.
- 4Spread the mixture onto a lightly oiled baking sheet or breadboard to a thickness of about 1/2 inch. Let it cool completely (about 30 minutes).
- 5Once cooled, cut the semolina mixture into squares or diamonds, about 2 inches across.
- 6Preheat oven to 375°F (190°C). Butter a baking dish. Arrange a layer of the semolina squares in the bottom of the dish. Sprinkle with grated Parmesan cheese and dot with butter. Repeat layers until the baking dish is full, ending with a layer of cheese and butter on top. Bake in the preheated oven for 20-25 minutes, or until a brown crust forms.
- 7Serve hot, directly from the baking dish.
