A simple and quick recipe for fried calf's liver, perfect for a light meal.

Ingredients

  • 8 ounces Calf's Liver (Sliced thinly)
  • 1 tablespoon All-Purpose Flour (For dredging)
  • 1 Egg (Beaten)
  • 2 tablespoons Lard (Or other cooking fat)
  • 0.25 teaspoon Salt (Or to taste)

Instructions

  1. 1Remove the skin from the calf's liver and cut into slices, about 1/4 inch thick.
  2. 2Roll the liver slices in flour, then dip in the beaten egg, ensuring they are fully coated.
  3. 3Heat the lard in a frying pan over medium-high heat until shimmering. Carefully place the liver slices in the hot lard, ensuring not to overcrowd the pan. Fry for about 1-2 minutes per side, until golden brown and cooked through. Do not overcook, as the liver will become tough.
  4. 4Remove the fried liver slices from the pan and drain on a paper towel-lined plate. Sprinkle with salt and serve immediately.
