Eggs "alia Sciarmante"
A sweet and savory egg dish with a creamy sauce, baked and garnished with fried bread.
Ingredients
- 4 Eggs (For hard boiling)
- 1 tablespoon Sugar (Heaping)
- 0.25 lemon Lemon rind (From one-quarter of a lemon)
- 1 cup Water (Scant)
- 1 small piece Cinnamon stick
- 1 cup Milk or Cream
- 4 Egg yolks (From fresh eggs)
- 1 teaspoon Lemon juice (For garnish)
- 2 slices Bread (For fried bread garnish)
- 2 tablespoons Oil for frying (For frying bread)
Instructions
- 1Place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool slightly. Peel the eggs and cut them into several pieces.
- 2In a saucepan, combine the sugar, lemon rind, water, and cinnamon stick. Bring to a boil and simmer until the mixture reduces to a syrup (about 5-7 minutes).
- 3Remove the lemon rind and cinnamon stick from the syrup. Add the milk or cream and heat through. Remove from heat and whisk in the egg yolks until well combined.
- 4Pour the sauce over the hard-boiled eggs in a shallow baking dish. Bake in a preheated oven at 350°F (175°C) for 10 minutes, or until heated through.
- 5Cut bread into small squares. Heat oil in a pan and fry the bread squares until golden brown. Drain on paper towels.
- 6Before serving, squeeze a little lemon juice over the dish and garnish with the fried bread squares.
