Creamy Tomato Rice

A simple and comforting rice dish with tomatoes, enriched with milk and egg for a creamy texture.

Ingredients

  • 0.5 cup Long-grain rice
  • 2 cups Water
  • 0.25 cup Milk
  • 1 Egg
  • 1 teaspoon Butter
  • 0.125 teaspoon Black pepper
  • 0.25 teaspoon Salt

Instructions

  1. 1In a saucepan, bring 2 cups of water to a boil. Add 1/2 cup of rice. Reduce heat to low and simmer gently, shaking the pan occasionally (do not stir), until the rice is soft and the water is absorbed.
  2. 2Drain any excess water from the rice.
  3. 3In a small bowl, whisk together 1 egg and 1/4 cup of milk. Add this mixture to the drained rice, along with 1 teaspoon of butter, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper.
  4. 4Return the rice mixture to the saucepan. Simmer over low heat for 5 minutes, or until the rice has absorbed the milk and the mixture has thickened slightly.
