Creamy Tomato Rice
A simple and comforting rice dish with tomatoes, enriched with milk and egg for a creamy texture.
Ingredients
- 0.5 cup Long-grain rice
- 2 cups Water
- 0.25 cup Milk
- 1 Egg
- 1 teaspoon Butter
- 0.125 teaspoon Black pepper
- 0.25 teaspoon Salt
Instructions
- 1In a saucepan, bring 2 cups of water to a boil. Add 1/2 cup of rice. Reduce heat to low and simmer gently, shaking the pan occasionally (do not stir), until the rice is soft and the water is absorbed.
- 2Drain any excess water from the rice.
- 3In a small bowl, whisk together 1 egg and 1/4 cup of milk. Add this mixture to the drained rice, along with 1 teaspoon of butter, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper.
- 4Return the rice mixture to the saucepan. Simmer over low heat for 5 minutes, or until the rice has absorbed the milk and the mixture has thickened slightly.
