Celery with Tomato Sauce
A simple side dish of boiled celery topped with a homemade tomato sauce. A classic, straightforward recipe.
Ingredients
- 4 stalks Celery stalks (Choose firm, crisp stalks.)
- 6 cups Water (For boiling the celery)
- 6 oz Tomato paste (Good quality tomato paste)
- 1 cup Water (For diluting the tomato paste)
- 1 tsp Sugar (Optional, to balance acidity)
- 1 pinch Salt (To taste)
- 1 pinch Black pepper (Freshly ground, to taste)
Instructions
- 1Cut off the green leaves from the celery stalks. Clean and wash the celery stalks thoroughly under cold running water.
- 2Bring the water to a boil in a large pot. Add the celery stalks and boil rapidly for 20 minutes, or until tender. Drain the celery well and pat dry with paper towels.
- 3In a saucepan, combine the tomato paste and water. Heat over medium heat, stirring constantly, until the sauce is smooth and heated through. Add sugar, salt, and pepper to taste. Simmer for 5 minutes.
- 4Arrange the boiled celery on a serving dish. Pour the tomato sauce over the celery and serve immediately.
