Ingredients

  • 4 stalks Celery stalks (Choose firm, crisp stalks.)
  • 6 cups Water (For boiling the celery)
  • 6 oz Tomato paste (Good quality tomato paste)
  • 1 cup Water (For diluting the tomato paste)
  • 1 tsp Sugar (Optional, to balance acidity)
  • 1 pinch Salt (To taste)
  • 1 pinch Black pepper (Freshly ground, to taste)

Instructions

  1. 1Cut off the green leaves from the celery stalks. Clean and wash the celery stalks thoroughly under cold running water.
  2. 2Bring the water to a boil in a large pot. Add the celery stalks and boil rapidly for 20 minutes, or until tender. Drain the celery well and pat dry with paper towels.
  3. 3In a saucepan, combine the tomato paste and water. Heat over medium heat, stirring constantly, until the sauce is smooth and heated through. Add sugar, salt, and pepper to taste. Simmer for 5 minutes.
  4. 4Arrange the boiled celery on a serving dish. Pour the tomato sauce over the celery and serve immediately.
