Bocconcini Skewers

Savory skewers featuring meat, ham, sage, and bread, broiled or baked to golden perfection. A simple and flavorful dish.

Ingredients

  • 1 pound Lamb, veal, mutton, or fresh pork (Cut into 2-inch pieces)
  • 1 teaspoon Salt (To taste)
  • 0.5 teaspoon Black pepper (To taste)
  • 8 slices Bread (About 1/2 inch thick, slightly larger than meat pieces)
  • 8 slices Ham, fat and lean (Same size as meat pieces)
  • 16 leaves Fresh sage leaves
  • 2 tablespoons Olive oil (Or melted butter)
  • 1 head Lettuce (For salad)

Instructions

  1. 1Cut the meat (lamb, veal, mutton, or fresh pork) into pieces about two inches wide. Sprinkle with salt and pepper.
  2. 2Cut the bread into pieces about one-half inch thick, a little bigger than the meat pieces. Cut the ham into pieces the same size as the meat pieces.
  3. 3Take a skewer and put on it first a piece of bread, then a piece of ham, then a leaf of sage, then a piece of meat, then another leaf of sage, then the ham, then the bread. Repeat this order, always having the meat between two leaves of sage, two slices of ham, and two pieces of bread.
  4. 4Coat everything well, especially the bread, with olive oil or melted butter.
  5. 5Broil over a hot fire for a good one-quarter of an hour, turning them constantly until they are colored a golden brown and are crisp. If preferred, these can be cooked in the oven. Put them on several wooden skewers, and lay them in a pan and cook until brown and crisp.
  6. 6Serve hot with lettuce salad.
