Agro Dolce Sauce

A sweet and sour sauce, perfect for venison or veal.

Ingredients

  • 2 tablespoons Sugar (brown or white)
  • 0.5 cup Currants
  • 0.25 ounce Grated chocolate (About a quarter of a standard chocolate bar)
  • 1 tablespoon Chopped candied orange peel
  • 1 tablespoon Chopped lemon peel
  • 1 tablespoon Capers
  • 1 cup Vinegar (red wine or apple cider)

Instructions

  1. 1In a medium saucepan, combine the sugar, currants, grated chocolate, chopped candied orange peel, chopped lemon peel, capers, and vinegar.
  2. 2Mix well and let soak for at least 30 minutes. Then, bring the mixture to a simmer over medium heat. Reduce heat to low and simmer for 10 minutes, stirring occasionally, until the sauce has thickened slightly.
  3. 3Pour the sauce over venison or veal and serve immediately.
