White Chaud-froid Sauce
A classic sauce for coating poultry, game, or other delicate items.
Ingredients
- 1 pint White Sauce
- 3/4 cup Aspic Jelly
- 1 tablespoon Lemon Juice
Instructions
- 1In a saucepan, combine 1 pint of white sauce, 3/4 cup of aspic jelly, and 1 tablespoon of lemon juice.
- 2Let the mixture simmer over low heat until reduced to the consistency of very thick cream, about 15 minutes.
- 3Remove any butter from the top of the sauce and let it cool slightly before using.
