White Chaud-froid Sauce

A classic sauce for coating poultry, game, or other delicate items.

Ingredients

  • 1 pint White Sauce
  • 3/4 cup Aspic Jelly
  • 1 tablespoon Lemon Juice

Instructions

  1. 1In a saucepan, combine 1 pint of white sauce, 3/4 cup of aspic jelly, and 1 tablespoon of lemon juice.
  2. 2Let the mixture simmer over low heat until reduced to the consistency of very thick cream, about 15 minutes.
  3. 3Remove any butter from the top of the sauce and let it cool slightly before using.
