Potato Salad (German Style)

Ingredients

  • 1 quart Potato slices or cubes

Instructions

  1. 1Boil the potatoes without peeling them. Once cooked, peel and cut them while hot into slices or cubes.
  2. 2Pour beef broth over the potatoes, enough to be absorbed. Sprinkle with salt, paprika, oil, and onion. Mix lightly and set aside for several hours to allow flavors to meld.
  3. 3Chop the whites of the hard-boiled eggs finely. Pass the yolks through a sieve. Mix the yolks with the remaining oil, vinegar, mustard, and sugar.
  4. 4Add the egg whites and the dressing to the potatoes. Mix gently. Sprinkle with chopped parsley. If using mushrooms, simmer them in broth for 10-15 minutes, break into pieces, and add to the salad with the egg whites.
