Potato Salad (German Style)
A classic German-style potato salad with a flavorful broth and egg dressing.
Ingredients
- 1 quart Potato slices or cubes

- 1/2 teaspoonful Paprika
- 8 tablespoonfuls Oil

- 2 Hard boiled eggs

Instructions
- 1Boil the potatoes without peeling them. Once cooked, peel and cut them while hot into slices or cubes.
- 2Pour beef broth over the potatoes, enough to be absorbed. Sprinkle with salt, paprika, oil, and onion. Mix lightly and set aside for several hours to allow flavors to meld.
- 3Chop the whites of the hard-boiled eggs finely. Pass the yolks through a sieve. Mix the yolks with the remaining oil, vinegar, mustard, and sugar.
- 4Add the egg whites and the dressing to the potatoes. Mix gently. Sprinkle with chopped parsley. If using mushrooms, simmer them in broth for 10-15 minutes, break into pieces, and add to the salad with the egg whites.
