Green-and-White Salad

A refreshing salad featuring chicken or sweetbreads, grapes, and celery, dressed with French dressing and served on lettuce nests.

Ingredients

  • 1 cup Cooked chicken or sweetbreads
  • 1/2 cup White grapes
  • 1/2 cup Blanched celery stalks
  • 1/4 cup French dressing
  • 8 leaves Lettuce leaves
  • 2 tablespoons Mayonnaise or cream dressing
  • 1 tablespoon Blanched pistachio nuts

Instructions

  1. 1Cut cooked chicken or sweetbreads into 1/2-inch cubes. Remove the skin and seeds from white grapes, and cut each grape in half.
  2. 2Cut tender, blanched celery stalks into small pieces.
  3. 3Combine equal portions of celery and meat, and half as much of the grapes. Mix with French dressing. Let the meat stand in the dressing for an hour or more before serving.
  4. 4Serve the salad in nests of lettuce. Dispose a little white mayonnaise or cream dressing on each nest. Garnish with halves of blanched pistachio nuts.
