Golden Buck
A savory dish combining Welsh Rarebit with poached eggs.
Ingredients
- 1 tablespoon Butter
- 1/2 pound Grated Cheddar Cheese
- 1/4 teaspoon Salt
- 1 dash Paprika
- 1/2 cup Heavy Cream
- 2 large Eggs

Instructions
- 1Melt the butter in a chafing dish. Add the grated cheese, salt, and paprika. Stir until the cheese is melted.
- 2Dilute the egg yolks with the cream. Add the diluted eggs to the cheese mixture and stir until smooth and slightly thickened. Do not boil. If necessary, cook over hot water.
- 3In a separate chafing dish, bring salted water just off the boil. Break the remaining eggs into the water and poach until cooked to your liking.
- 4Toast the bread. Place a portion of the Welsh Rarebit on each slice of toast. Top each with a poached egg.
