Curried Sardines

A simple recipe for curried sardines served on bread with apple garnish.

Ingredients

  • 1 teaspoonful Sugar
  • 1 teaspoonful Curry powder
  • 1 saltspoonful Salt
  • 1 cup Heavy cream
  • 1/2 teaspoonful Lemon juice
  • 10 or 12 Sardines
  • 2 tablespoons Butter (Quantity estimated (not specified in original recipe))
  • 4 slices Bread (Quantity estimated (not specified in original recipe))
  • 1 medium Tart apples (Quantity estimated (not specified in original recipe))

Instructions

  1. 1In a small saucepan, mix together the sugar, curry powder, and salt. Add the cream and lemon juice. Heat over medium heat, stirring constantly, until the mixture is hot but not boiling.
  2. 2Gently place the sardines into the hot sauce. Heat through for about 2-3 minutes, until warmed.
  3. 3In a separate pan, melt the butter over medium heat. Add the bread, cut into bite-sized pieces, and sauté until golden brown. Core the apples and slice them into rounds. Sauté the apple slices in the same pan until slightly softened.
  4. 4Place each sardine on a piece of the toasted bread. Pour a little of the sauce over the top and garnish with a round of the sautéed apple. Serve immediately.
