Bacon Sauce
A simple sauce made with bacon fat, flour, vinegar, and eggs, perfect for salads.
Ingredients

- 2 tablespoonfuls All-purpose flour

Instructions
- 1Heat the bacon fat in a saucepan over medium heat. Add the flour and paprika, and cook, stirring constantly, for about 1 minute until a smooth paste forms.
- 2Whisk in the vinegar and water. Bring the mixture to a simmer, stirring constantly, until it thickens slightly, about 2-3 minutes.
- 3Remove the saucepan from the heat. In a separate bowl, whisk the eggs. Slowly whisk a small amount of the hot sauce into the eggs to temper them. Then, gradually whisk the egg mixture back into the saucepan. Season with salt to taste. Do not allow the sauce to boil after the eggs are added.
