Yorkshire Rarebit
A variation of Golden Buck with broiled bacon.
Ingredients
- 4 ounces Cheese, such as cheddar
- 1 tablespoon Butter
- 1 tablespoon Flour
- 1/2 cup Milk
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon Dry mustard
- to taste Salt
- to taste Black pepper
- 2 slices Bacon
- 2 Eggs
Instructions
- 1Grate the cheese. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens. Remove from heat and stir in the cheese, Worcestershire sauce, dry mustard, salt, and pepper until the cheese is melted and the mixture is smooth.
- 2Broil the bacon slices until crisp. Set aside.
- 3Poach the eggs until the whites are set and the yolks are still runny.
- 4Spoon the rarebit mixture onto toast. Carefully place a poached egg on top of each rarebit. Top with two slices of broiled bacon. Serve immediately.
