Webster Cake

A classic cake recipe featuring raisins and flavored with bitter almond and vanilla extracts.

Ingredients

  • 1 cup Butter
  • 3 cups Sugar
  • 2 Eggs
  • 5 cups Flour
  • 1 teaspoon Royal Baking Powder
  • 2 cups Raisins, seeded
  • 1 teaspoon Royal Extract Bitter Almonds
  • 1 teaspoon Vanilla Extract
  • 1.5 cups Milk

Instructions

  1. 1In a large bowl, rub the butter, sugar, and eggs together until smooth.
  2. 2Add the flour (sifted with the Royal Baking Powder), raisins, milk, Royal Extract Bitter Almonds, and Vanilla Extract to the butter mixture. Mix until you have a medium batter.
  3. 3Preheat oven to 425°F (220°C). Pour batter into a cake mould and bake in a quick, steady oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
