Vermicelli Pudding

Vermicelli Pudding

A sweet pudding made with vermicelli, milk, eggs, and sugar, baked until set.

Ingredients

  • 1 cupful Broken Italian vermicelli
  • 1 1/2 pints Whole milk (Originally sweet milk. Substituted with whole milk for modern preference.)
  • 4 Eggs
  • 1 cupful Granulated sugar
  • 1 large tablespoonful Butter
  • 1 teaspoonful Vanilla extract

Instructions

  1. 1Boil vermicelli in well salted water for 10 minutes. Drain.
  2. 2Add the cooked vermicelli to the boiling milk and simmer for 20 minutes.
  3. 3Remove from heat. Pour in sugar, eggs, and butter (beaten together), and vanilla extract. Put in a well-buttered pudding dish. Bake in a moderate oven at 350°F (175°C) for 35 minutes, or until set.
