Veal Cutlets

Modernized recipe for Veal Cutlets.

Ingredients

  • 4 cutlets Veal cutlets
  • as needed Black pepper
  • as needed Salt
  • 1 Egg
  • 1 cup Cracker crumbs
  • 2 tablespoons Butter
  • 2 tablespoons Drawn butter
  • 1 tablespoon Tomato ketchup

Instructions

  1. 1Flatten the veal cutlets to an even thickness using a meat mallet or the side of a hatchet. Season both sides with pepper and salt.
  2. 2In a shallow dish, beat the egg. Dip each cutlet in the egg, then dredge in cracker crumbs, ensuring both sides are coated.
  3. 3Melt the butter in a skillet over medium heat. Fry the cutlets, turning as they brown, until cooked through and golden brown, about 3-4 minutes per side.
  4. 4Dish the cutlets and pour the drawn butter, in which the tomato ketchup has been cooked, over them.
