Vanilla Custard
A classic vanilla custard recipe.
Ingredients
- 1 pint Heavy cream
- 4 ounces Granulated sugar
- 6 count Egg yolks
- as needed Whole milk
- 1 teaspoonful Vanilla extract
- as needed Egg whites
- as needed Granulated sugar
Instructions
- 1In a saucepan, combine the heavy cream and sugar. Bring to a simmer over medium heat, stirring occasionally. Simmer for 15 minutes, then remove from heat and strain through a fine-mesh sieve or muslin cloth.
- 2In a bowl, whisk together the egg yolks. Gradually whisk in the warm cream mixture. Pour the mixture back into the saucepan and place over a pan of simmering water (double boiler), stirring constantly until the custard thickens enough to coat the back of a spoon (about 10-15 minutes).
- 3Remove the custard from the heat and let it cool gradually, stirring occasionally. Stir in the vanilla extract to taste.
- 4When cold, serve the custard in individual dishes. Top with whipped egg whites and sifted sugar, if desired.
