Vanilla Custard

Vanilla Custard

A classic vanilla custard recipe.

Ingredients

  • 1 pint Heavy cream
  • 4 ounces Granulated sugar
  • 6 count Egg yolks
  • as needed Whole milk
  • 1 teaspoonful Vanilla extract
  • as needed Egg whites
  • as needed Granulated sugar

Instructions

  1. 1In a saucepan, combine the heavy cream and sugar. Bring to a simmer over medium heat, stirring occasionally. Simmer for 15 minutes, then remove from heat and strain through a fine-mesh sieve or muslin cloth.
  2. 2In a bowl, whisk together the egg yolks. Gradually whisk in the warm cream mixture. Pour the mixture back into the saucepan and place over a pan of simmering water (double boiler), stirring constantly until the custard thickens enough to coat the back of a spoon (about 10-15 minutes).
  3. 3Remove the custard from the heat and let it cool gradually, stirring occasionally. Stir in the vanilla extract to taste.
  4. 4When cold, serve the custard in individual dishes. Top with whipped egg whites and sifted sugar, if desired.
