Turkey Hash and Poached Eggs

A classic breakfast dish using leftover turkey.

Ingredients

  • 1 portion Cooked turkey or chicken, finely chopped
  • 1/2 pint Gravy
  • 1 piece Butter
  • 1 piece All-purpose flour
  • 1 teaspoonful Catsup
  • to taste Black pepper
  • to taste Salt
  • 1/2 piece Lemon peel, finely shredded
  • 2 or more Eggs

Instructions

  1. 1Chop the cooked turkey or chicken very fine. In a stew-pan, add the gravy, a small piece of butter rolled in flour, the catsup, pepper, salt, and finely shredded lemon peel. Bring to a simmer.
  2. 2Add the chopped turkey or chicken to the stew-pan and stir over a clear fire until thoroughly heated through.
  3. 3Serve the hash with 2 or more poached eggs per serving. If there are not enough eggs for each guest, break the eggs with a spoon and mix them into the hash just before serving.
  4. 4Serve hot.
