- 1 portion Cooked turkey or chicken, finely chopped
- 1/2 pint Gravy
- 1 piece Butter
- 1 piece All-purpose flour
- 1 teaspoonful Catsup

Instructions
- 1Chop the cooked turkey or chicken very fine. In a stew-pan, add the gravy, a small piece of butter rolled in flour, the catsup, pepper, salt, and finely shredded lemon peel. Bring to a simmer.
- 2Add the chopped turkey or chicken to the stew-pan and stir over a clear fire until thoroughly heated through.
- 3Serve the hash with 2 or more poached eggs per serving. If there are not enough eggs for each guest, break the eggs with a spoon and mix them into the hash just before serving.
- 4Serve hot.
