Tomato Soup

A classic tomato soup recipe.

Ingredients

  • 1 gallon Ripe tomatoes
  • 2 quarts Rich soup stock
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Salt
  • 1 clove Garlic clove

Instructions

  1. 1Carefully skin the ripe tomatoes.
  2. 2Place the skinned tomatoes in a soup pot. Pour over the rich soup stock. Let simmer for 1 hour.
  3. 3Run the soup through a sieve. Return to the pot and season with pepper, salt, and a clove of garlic.
  4. 4Dish the soup as soon as it boils up a second time.
