Tomato Omelette

Tomato Omelette

A simple omelette with tomatoes.

Ingredients

  • 2 or 3 Tomatoes
  • 2 tablespoons Butter
  • 3 large Eggs
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • as needed Tomato Sauce (optional)

Instructions

  1. 1Skin the tomatoes by scoring an 'X' on the bottom, blanching in boiling water for 30 seconds, then immediately transferring to an ice bath. Peel the skin. Slice the tomatoes.
  2. 2Melt 1 tablespoon of butter in a pan over medium heat. Add the sliced tomatoes and cook until softened, about 5 minutes.
  3. 3In a bowl, beat the eggs with salt and pepper until well combined.
  4. 4Melt the remaining butter in the pan over medium heat. Pour in the eggs, stirring gently with a spatula to prevent sticking. Once the eggs are partially set, add the cooked tomatoes. Continue cooking until the eggs are set but still slightly moist.
  5. 5Fold the omelette in half on the plate. Optionally, serve with tomato sauce.
