Tomato Omelette
A simple omelette with tomatoes.
Ingredients
- 2 or 3 Tomatoes
- 2 tablespoons Butter
- 3 large Eggs
- 1/4 teaspoon Salt
- 1/8 teaspoon Black Pepper
- as needed Tomato Sauce (optional)
Instructions
- 1Skin the tomatoes by scoring an 'X' on the bottom, blanching in boiling water for 30 seconds, then immediately transferring to an ice bath. Peel the skin. Slice the tomatoes.
- 2Melt 1 tablespoon of butter in a pan over medium heat. Add the sliced tomatoes and cook until softened, about 5 minutes.
- 3In a bowl, beat the eggs with salt and pepper until well combined.
- 4Melt the remaining butter in the pan over medium heat. Pour in the eggs, stirring gently with a spatula to prevent sticking. Once the eggs are partially set, add the cooked tomatoes. Continue cooking until the eggs are set but still slightly moist.
- 5Fold the omelette in half on the plate. Optionally, serve with tomato sauce.
