Tomato Catsup

A classic tomato catsup recipe from 1888.

Ingredients

  • 1 peck Ripe tomatoes
  • 1 tablespoonful Ground cloves
  • 1 tablespoonful Allspice
  • 1 tablespoonful Cinnamon
  • 1 teaspoonful Cayenne pepper
  • 1/4 pound Salt
  • 1/4 pound Mustard
  • 1 pint Vinegar

Instructions

  1. 1Cut up the ripe tomatoes.
  2. 2Boil the cut tomatoes until tender, then sift them through a wire sieve.
  3. 3Add ground cloves, allspice, cinnamon, cayenne pepper, salt, mustard, and vinegar to the sieved tomato mixture.
  4. 4Gently boil the mixture for 3 hours.
  5. 5Bottle and seal the catsup while it is still warm.
