Tomato Catsup
A classic tomato catsup recipe from 1888.
Ingredients
- 1 peck Ripe tomatoes
- 1 tablespoonful Ground cloves
- 1 tablespoonful Allspice
- 1 tablespoonful Cinnamon
- 1 teaspoonful Cayenne pepper
- 1/4 pound Salt
- 1/4 pound Mustard
- 1 pint Vinegar
Instructions
- 1Cut up the ripe tomatoes.
- 2Boil the cut tomatoes until tender, then sift them through a wire sieve.
- 3Add ground cloves, allspice, cinnamon, cayenne pepper, salt, mustard, and vinegar to the sieved tomato mixture.
- 4Gently boil the mixture for 3 hours.
- 5Bottle and seal the catsup while it is still warm.
