To Roast a Leg of Pork
A classic recipe for roasting a leg of pork, with instructions for preparation and serving.

Instructions
- 1Choose a small leg of fine young pork. Cut a slit in the knuckle with a sharp knife, and fill the space with chopped sage and onions, a little pepper, and salt.
- 2Preheat oven to 325°F (160°C). Place the pork in the oven and roast for approximately 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C). When half done, score the skin in slices, but do not cut deeper than the outer rind.
- 3Serve the roasted pork with apple sauce and potatoes.
