To Preserve Strawberries

A recipe for preserving strawberries using sugar and heat.

Ingredients

  • 1 pound Strawberries
  • 1 pound Granulated Sugar

Instructions

  1. 1Pick over the strawberries, removing any bruised or damaged ones.
  2. 2Add the strawberries and sugar to a preserving kettle or a large, heavy-bottomed pot. Place over low heat and allow the sugar to melt, stirring occasionally.
  3. 3Once the sugar is melted, increase the heat and boil the mixture vigorously for precisely 25 minutes, stirring as needed to prevent burning.
  4. 4While the strawberries are boiling, have your sterilized jars ready. Heat the jars to prevent breakage when the hot fruit is added.
  5. 5Carefully pour the boiling hot strawberry mixture into the heated jars, leaving appropriate headspace. Cover and seal the jars immediately.
  6. 6Set the sealed jars in a cool place to cool completely.
