To Prepare Tripe

A classic recipe for preparing tripe, a traditional dish.

Ingredients

  • Tripe
  • Salt
  • Water
  • Flour
  • Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • Baked potatoes
  • Fried apples
  • Tomatoes
  • Toasted bread

Instructions

  1. 1Order the tripe the day before you plan to serve it. Scrape it thoroughly to remove any impurities. Wash it in several changes of water to clean it.
  2. 2Place the tripe in a pot with salt and water. Boil until perfectly tender. Let it drain in a platter overnight.
  3. 3The next day, cut the tripe into small pieces. Roll the pieces in flour. Fry them in hot butter (or vegetable shortening) until golden brown.
  4. 4Make a rich, brown gravy using a little of the butter (or vegetable shortening) in which the tripe was fried.
  5. 5If serving for breakfast, serve with baked potatoes, fried apples, and tomatoes. The tomatoes may be canned, cooked, and served with thin slices of toasted bread at the bottom of the dish.
