To Make Sage and Onion Dressing, for Roast Pig or Roast Pork

A classic sage and onion dressing recipe.

Ingredients

  • 2 large Large onions
  • 4 cupfuls Bread crumbs (Double the quantity of bread crumbs as the onions.)
  • 3 teaspoonfuls Chopped sage
  • 2 oz Butter
  • 1 Egg
  • as needed Pepper
  • as needed Salt

Instructions

  1. 1Boil the onions in 2 or 3 changes of water to remove some of their strong taste. Drain the onions.
  2. 2Finely chop the drained onions. Mix them with the bread crumbs, minced sage, butter, pepper, and salt. Mix the whole with the well-beaten yolk of the egg to bind it.
