To Keep Eggs
A method for preserving eggs using a lime mixture.
Ingredients
- 4 quarts Air-slacked lime
- 2 tablespoonfuls Cream of tartar
- 2 quarts Cold water
- 9 dozen Fresh eggs
Instructions
- 1In a container, combine 4 quarts of air-slacked lime, 2 tablespoonfuls of cream of tartar, and 2 quarts of cold water. Stir to mix.
- 2Place fresh eggs into a stone jar. Pour the lime mixture over the eggs, ensuring they are fully submerged. This method will preserve the eggs for many months if they were fresh when laid. If the water level drops, add more water to keep the eggs covered. Cover the jar closely and store it in a cool place.
