To Fry Brook Trout or any other Small Fish

A simple recipe for frying small fish.

Ingredients

  • as needed Brook trout or other small fish
  • to taste Black pepper
  • to taste Salt
  • as needed Cornmeal
  • 1/3 portion Butter
  • 2/3 portion Vegetable shortening or neutral oil (Originally lard. Substituted with vegetable shortening or neutral oil for modern preference.)

Instructions

  1. 1Clean the fish. Wrap each fish individually in a clean, dry towel and let them rest for a few minutes.
  2. 2Season the fish with pepper and salt to taste.
  3. 3Roll the seasoned fish in cornmeal. Heat the butter and vegetable shortening (or oil) in a frying pan over medium-high heat. Fry the fish until golden brown and cooked through, about 5-7 minutes per side.
  4. 4Drain the fried fish on a sieve or paper towels and serve hot.
