To Broil Fish

A simple recipe for broiling fish.

Ingredients

  • as needed Salt
  • as needed Butter
  • as needed Pepper

Instructions

  1. 1Clean, wash, and wipe the fish dry. Split the fish so that when laid flat, the backbone will be in the middle.
  2. 2Sprinkle the fish with salt. Lay the fish, inside down, upon a buttered gridiron over a clear fire until it is nicely colored, then turn. Broil for approximately 15 minutes, or until cooked through. (Note: Broiling time will vary depending on the thickness of the fish and the heat of the fire.)
  3. 3When done, put the fish upon a hot dish, butter it plentifully, and season with pepper. Put a hot cover over it and serve immediately.
