To Boil Asparagus

A simple recipe for boiling asparagus.

Ingredients

  • 1 tablespoonful Salt
  • 1/2 gallon Water
  • stalks Asparagus
  • slice Toasted bread
  • as needed Butter

Instructions

  1. 1Add 1 tablespoonful of salt to 1/2 gallon of water in a wide stewpan. Bring the water to a boil.
  2. 2Scrape clean all the white parts of the asparagus stalks. Throw them into cold water. Tie them up in bundles, cut the root ends even, and put them in a piece of muslin to preserve the tops.
  3. 3Lay the asparagus in the boiling salted water and boil it quickly until it is tender, about 15 to 18 minutes.
  4. 4Have a thin slice of toasted bread, cut in square pieces, laid at the bottom of the dish.
  5. 5Take up the asparagus, lay it on the toast with the white ends upwards, and the points meeting in the center. Serve with butter.
