To Boil Asparagus
A simple recipe for boiling asparagus.
Ingredients
- 1 tablespoonful Salt
- 1/2 gallon Water
- stalks Asparagus
- slice Toasted bread
- as needed Butter
Instructions
- 1Add 1 tablespoonful of salt to 1/2 gallon of water in a wide stewpan. Bring the water to a boil.
- 2Scrape clean all the white parts of the asparagus stalks. Throw them into cold water. Tie them up in bundles, cut the root ends even, and put them in a piece of muslin to preserve the tops.
- 3Lay the asparagus in the boiling salted water and boil it quickly until it is tender, about 15 to 18 minutes.
- 4Have a thin slice of toasted bread, cut in square pieces, laid at the bottom of the dish.
- 5Take up the asparagus, lay it on the toast with the white ends upwards, and the points meeting in the center. Serve with butter.
