To Boil a Ham
A recipe for boiling a ham.
Ingredients
- 1 piece Ham
- as needed Water
- 1 blade Blade of mace
- as needed Cloves
- 1 sprig Fresh thyme sprig
- 2 Bay leaves
- as needed Parsley
- as needed Breadcrumbs
Instructions
- 1Well soak ham in a large quantity of water for 24 hours.
- 2Trim and scrape the ham very clean.
- 3Put the ham into a large stewpan, with more than sufficient water to cover it. Add the blade of mace, cloves, thyme, and bay leaves. Boil for 4 or 5 hours, according to weight.
- 4When done, let it become cold in the liquor in which it was boiled.
- 5Then remove the rind carefully, without injuring the fat. Press a cloth over it to absorb as much of the grease as possible. Shake some breadcrumbs over the fat. Serve cold garnished with parsley. Ornament the knuckle with a paper frill.
