Tea Cake No. 2

Tea Cake No. 2

A cake similar to coffee cake, but using tea instead of coffee.

Ingredients

  • 1 cupful Very strong tea
  • 1 cupful Butter
  • 2 cupfuls Sugar
  • 3 Eggs
  • 1 1/2 pints Flour
  • 1 1/2 teaspoonfuls Baking powder
  • 1 cupful Stoned raisins, cut in two
  • 1/2 cupful Chopped citron
  • 10 drops Royal Extract Allspice
  • 10 drops Nutmeg
  • 1/2 cupful Milk

Instructions

  1. 1Rub the butter and sugar to a white cream. Add the eggs, one at a time, beating for 3-4 minutes between each addition.
  2. 2Sift together flour and baking powder. Add to the butter mixture along with the tea, raisins, citron, milk, and extracts. Mix into a smooth batter.
  3. 3Preheat oven to 350°F (175°C). Bake in a paper-lined cake tin for 50 minutes, or until a toothpick inserted into the center comes out clean.
