Sweetbreads
A classic preparation for sweetbreads, involving scalding, chilling, coating, and either frying or boiling.
Ingredients
- Sweetbreads
- as needed Salt
- as needed Cold Water
- as needed Egg
- as needed Breadcrumbs or Cracker Crumbs
- as needed Butter
Instructions
- 1Place the sweetbreads in a pot and cover with salted water. Bring the water to a boil and scald the sweetbreads. This should take a few minutes until they are blanched.
- 2Remove any stringy parts from the sweetbreads. Place the blanched sweetbreads in a bowl of cold water for 5-10 minutes. Drain the sweetbreads and pat them dry with a towel.
- 3Dip the prepared sweetbreads in beaten egg, then coat them with breadcrumbs or cracker crumbs. Fry the coated sweetbreads in butter over medium heat until golden brown and cooked through, about 10-15 minutes. Alternatively, boil the sweetbreads plain in water until cooked through.
