Sweet Potato Buns

A recipe for sweet potato buns from the Royal Baker Pastry Cook.

Ingredients

  • 3 large Sweet potatoes
  • 1 1/2 pints All-purpose flour
  • 1 pinch Salt
  • 1 1/2 teaspoonfuls Baking powder
  • 1 pint Heavy cream

Instructions

  1. 1Boil the sweet potatoes until tender. This should take about 10-15 minutes. Once cooked, drain the potatoes.
  2. 2Rub the cooked sweet potatoes very fine with the heavy cream.
  3. 3Sift together the flour, salt, and baking powder.
  4. 4Add the dry ingredients to the sweet potato preparation. Mix into a rather firm, smooth dough. Form into round pieces the size of a small egg. Lay the buns on a greased baking sheet.
  5. 5Preheat oven to 400°F (200°C). Bake in the hot oven for 20 minutes, or until golden brown.
