Sweet Pickle for Plums, Peaches or Tomatoes
A recipe for sweet pickles using cider vinegar, sugar, and spices. The recipe offers two variations, one more expensive and one less expensive.
Ingredients
- 4 quarts Cider vinegar
- 5 pounds Granulated sugar
- 1/4 pound Cinnamon sticks
- 2 ounces Whole cloves
- 7 pounds Fruit (Plums, Peaches, or Tomatoes)
- 4 pounds Granulated sugar
- 8 pounds Fruit (Plums, Peaches, or Tomatoes)
- 2 ounces Cinnamon sticks
- 1 ounce Whole cloves
- 1 teaspoonful Salt
- 1 teaspoonful Allspice
Instructions
- 1In a large pot, combine 4 quarts cider vinegar and 5 pounds sugar. Heat over medium heat, stirring until the sugar dissolves. Bring to a simmer, skimming off any foam that forms. Add 1/4 pound cinnamon sticks and 2 ounces cloves. Boil for a few minutes. Pour the hot vinegar mixture over 7 pounds of fruit.
- 2Pour the vinegar mixture off the fruit. Reheat the vinegar mixture to a simmer. Pour the hot vinegar mixture over the fruit. Repeat this process twice more at intervals of three days.
- 3Alternatively, for a less expensive method, combine 4 pounds sugar, 2 ounces cinnamon sticks, 1 ounce cloves, 1 teaspoonful salt, and 1 teaspoonful allspice. Add to 8 pounds of fruit.
