Sweet Pickle for Plums, Peaches or Tomatoes

A recipe for sweet pickles using cider vinegar, sugar, and spices. The recipe offers two variations, one more expensive and one less expensive.

Ingredients

  • 4 quarts Cider vinegar
  • 5 pounds Granulated sugar
  • 1/4 pound Cinnamon sticks
  • 2 ounces Whole cloves
  • 7 pounds Fruit (Plums, Peaches, or Tomatoes)
  • 4 pounds Granulated sugar
  • 8 pounds Fruit (Plums, Peaches, or Tomatoes)
  • 2 ounces Cinnamon sticks
  • 1 ounce Whole cloves
  • 1 teaspoonful Salt
  • 1 teaspoonful Allspice

Instructions

  1. 1In a large pot, combine 4 quarts cider vinegar and 5 pounds sugar. Heat over medium heat, stirring until the sugar dissolves. Bring to a simmer, skimming off any foam that forms. Add 1/4 pound cinnamon sticks and 2 ounces cloves. Boil for a few minutes. Pour the hot vinegar mixture over 7 pounds of fruit.
  2. 2Pour the vinegar mixture off the fruit. Reheat the vinegar mixture to a simmer. Pour the hot vinegar mixture over the fruit. Repeat this process twice more at intervals of three days.
  3. 3Alternatively, for a less expensive method, combine 4 pounds sugar, 2 ounces cinnamon sticks, 1 ounce cloves, 1 teaspoonful salt, and 1 teaspoonful allspice. Add to 8 pounds of fruit.
