Succotash No. 2
A classic succotash recipe.
Ingredients
- 10 cobs Corn, cut from 10 cobs
- 1/3 quantity of corn Lima beans
- as needed Water
- 1 cupful Milk
- 1 pinch Baking soda (Originally 'soda'. Substituted with baking soda.)
- 1 tablespoonful Butter
- 1 tablespoonful Flour
- to taste Pepper
- to taste Salt
Instructions
- 1Cut the corn from 10 cobs. Mix this with one-third the quantity of Lima beans.
- 2Cook the corn and Lima beans in just enough water to cover them for 1 hour.
- 3Drain off most of the water. Add a cupful of milk, with a pinch of baking soda stirred in.
- 4When this boils, stir in a great spoonful of butter rolled in flour; season with pepper and salt, and simmer 10 minutes longer.
