Succotash No. 2

A classic succotash recipe.

Ingredients

  • 10 cobs Corn, cut from 10 cobs
  • 1/3 quantity of corn Lima beans
  • as needed Water
  • 1 cupful Milk
  • 1 pinch Baking soda (Originally 'soda'. Substituted with baking soda.)
  • 1 tablespoonful Butter
  • 1 tablespoonful Flour
  • to taste Pepper
  • to taste Salt

Instructions

  1. 1Cut the corn from 10 cobs. Mix this with one-third the quantity of Lima beans.
  2. 2Cook the corn and Lima beans in just enough water to cover them for 1 hour.
  3. 3Drain off most of the water. Add a cupful of milk, with a pinch of baking soda stirred in.
  4. 4When this boils, stir in a great spoonful of butter rolled in flour; season with pepper and salt, and simmer 10 minutes longer.
