Ingredients

  • as needed Fresh, ripe strawberries or raspberries
  • 1 pound Granulated sugar

Instructions

  1. 1Gently heat the fresh, ripe strawberries or raspberries over low heat, allowing the juice to flow slowly. Do not let the fruit cook for more than 20 minutes after the juice becomes perfectly clear.
  2. 2Run the cooked fruit through a jelly bag without pressing. If the juice is at all cloudy, strain it again through muslin into a clean pan.
  3. 3Simmer the strained juice for 15 minutes. Then, add 1 pound of granulated sugar for each pint of juice and boil for 10 minutes longer.
