Stewed Squirrels

A traditional stew featuring squirrel, vegetables, and butter.

Ingredients

  • 3 Squirrels
  • 1/2 lb Fat salt pork
  • 1 Onion
  • 12 Ears of corn
  • 6 Tomatoes
  • 3 tablespoonfuls Butter
  • 3 tablespoonfuls Flour
  • as needed Parsley
  • as needed Water

Instructions

  1. 1Skin and clean the squirrels. Joint them as you would chicken for fricassee.
  2. 2In a large pot, combine the squirrels, cut-up pork, sliced onion (if using), and parsley. Add enough water to cover the ingredients.
  3. 3Bring the mixture to a boil.
  4. 4After boiling for 10 minutes, add the corn and stew until the squirrels are tender.
  5. 5Add the thinly sliced tomatoes and, after 20 minutes, stir in the butter and flour mixture. Simmer for 10 minutes.
  6. 6Serve the stew in a large, deep dish.
