Stewed Corn
A simple recipe for stewed corn.
Ingredients
- 1 quart Canned corn
- as needed Cold water
- as needed Milk
- 1 tablespoonful Butter
- as needed Flour
- to taste Salt
Instructions
- 1Place 1 quart of canned corn in its own liquor in a heat-safe bowl or pot. Set this vessel in a larger pot of hot water (creating a double boiler). If the corn seems too dry, add a little cold water.
- 2When the corn is tender, pour in enough milk to cover it. Bring the mixture to a boil. In a separate small bowl, roll 1 tablespoonful of butter in flour. Add this to the boiling corn and milk, and season with salt to taste. Stew gently, stirring well, for 3 or 4 minutes.
- 3Turn the stewed corn into a deep dish and serve immediately. Keep the vessel containing the corn closely covered while it is cooking to preserve the color and facilitate the cooking process.
