Stewed Chicken
A simple stewed chicken recipe with potatoes and a creamy sauce.
Ingredients
- 2 chickens Chicken
- as needed Butter
- as needed Salt
- as needed Pepper
- as needed Potatoes
- as needed Flour
- 1 pint Heavy cream
- as needed Whole milk (Originally sweet milk. Substituted with whole milk.)
Instructions
- 1Joint the chicken into small pieces. Cook the chicken until tender. Season with butter, salt, and pepper. Thicken the gravy with flour.
- 2Just before the chicken is almost done, pare a quantity of potatoes, cut them in two, and lay them on top of the chicken. Let them boil until done.
- 3Take the potatoes up on a plate by themselves. Turn a pint of heavy cream into the chicken. Thicken with flour, wet with whole milk, and season with pepper, salt, and plenty of butter. Whole milk can be used in place of cream, but will require more butter.
