Spiced Tomatoes
A recipe for spiced tomatoes, a historical method of preserving tomatoes.
Ingredients
- 20 pounds Ripe Tomatoes
- 2 quarts White Vinegar
- 8 pounds Granulated Sugar
- 4 tablespoonfuls Ground Cinnamon
- 4 tablespoonfuls Ground Cloves
- 4 tablespoonfuls Ground Allspice
Instructions
- 1Scald and peel the ripe tomatoes. This will take approximately 15 minutes.
- 2In a large, heavy-bottomed pot, combine the peeled tomatoes, vinegar, sugar, cinnamon, cloves, and allspice. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer. Stir frequently to prevent sticking and burning. Continue simmering until the mixture thickens, approximately 30 minutes.
