Spiced Tomatoes

A recipe for spiced tomatoes, a historical method of preserving tomatoes.

Ingredients

  • 20 pounds Ripe Tomatoes
  • 2 quarts White Vinegar
  • 8 pounds Granulated Sugar
  • 4 tablespoonfuls Ground Cinnamon
  • 4 tablespoonfuls Ground Cloves
  • 4 tablespoonfuls Ground Allspice

Instructions

  1. 1Scald and peel the ripe tomatoes. This will take approximately 15 minutes.
  2. 2In a large, heavy-bottomed pot, combine the peeled tomatoes, vinegar, sugar, cinnamon, cloves, and allspice. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer. Stir frequently to prevent sticking and burning. Continue simmering until the mixture thickens, approximately 30 minutes.
