Spencer Cakes

Spencer Cakes are small, spiced cakes made with sugar, eggs, flour, baking powder, coriander seed, and lemon extract.

Ingredients

  • 2 cups Sugar
  • 8 Eggs
  • 1.5 pints Flour
  • 1 teaspoon Royal Baking Powder
  • 2 tablespoons Coriander seed
  • 1 teaspoon Royal Extract Lemon

Instructions

  1. 1In a large bowl, beat the 8 eggs and 2 cupfuls of sugar together until the mixture becomes thick and white.
  2. 2Sift together 1 1/2 pints of flour and 1 teaspoonful of Royal Baking Powder. Add the sifted flour mixture, 2 tablespoonfuls of coriander seed, and 1 teaspoonful of Royal Extract Lemon to the egg and sugar mixture. Mix until you have a rather thick sponge.
  3. 3Preheat oven to 425°F (220°C). Drop the batter in spoonfuls onto a greased tin. Bake in a hot oven for 5-6 minutes.
