Souse
A traditional dish made from pig's feet and ears, pickled in vinegar and spices.
Ingredients
- as needed Pig's feet and ears
- as needed Salt
- as needed Water
- as needed Vinegar
- as needed Mace
- as needed Peppercorns
- as needed Cloves
Instructions
- 1Thoroughly clean the pig's feet and ears.
- 2Soak the cleaned pig's feet and ears in salt and water for several days. Then, boil them until they are tender. Once tender, split them.
- 3To souse them cold, pour boiling vinegar over the split pig's feet and ears. Spice with mace and peppercorns. Cloves can be added for color and flavor. Add a little salt to help them keep for a month or two.
