A traditional dish made from pig's feet and ears, pickled in vinegar and spices.

Ingredients

  • as needed Pig's feet and ears
  • as needed Salt
  • as needed Water
  • as needed Vinegar
  • as needed Mace
  • as needed Peppercorns
  • as needed Cloves

Instructions

  1. 1Thoroughly clean the pig's feet and ears.
  2. 2Soak the cleaned pig's feet and ears in salt and water for several days. Then, boil them until they are tender. Once tender, split them.
  3. 3To souse them cold, pour boiling vinegar over the split pig's feet and ears. Spice with mace and peppercorns. Cloves can be added for color and flavor. Add a little salt to help them keep for a month or two.
