Soft Gingerbread

A classic gingerbread recipe from 1888, modernized for ease of use.

Ingredients

  • 1/2 cup Butter (Originally butter.)
  • 2 cups Molasses
  • 1 cup Granulated Sugar
  • 4 cups All-Purpose Flour
  • 1 cup Milk
  • 4 Eggs
  • 1 teaspoon Royal Baking Powder
  • 1 teaspoon Ground Ginger (To taste.)
  • 1/2 teaspoon Ground Cloves (To taste.)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. 2In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the molasses and eggs until well combined.
  3. 3In a separate bowl, whisk together the flour, baking powder, ginger, and cloves.
  4. 4Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  5. 5Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6Let the gingerbread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Slice and serve.
