Silver Cake

Silver Cake

A cake similar to Gold Cake, but using egg whites instead of yolks.

Ingredients

  • 3/4 cupful Butter
  • 2 cupfuls Sugar
  • 10 whites Egg whites
  • 1 1/2 pints Flour
  • 2 teaspoonfuls Baking powder
  • 1 cupful Thin cream
  • 1 teaspoonful Lemon extract
  • 1 teaspoonful Nutmeg

Instructions

  1. 1Rub the butter and sugar to a white cream. Add the egg whites, three at a time, beating a little between each addition. Add the flour sifted with the baking powder, the thin cream, and the extracts. Mix into a pretty firm batter.
  2. 2Preheat oven to 350°F (175°C). Bake in a paper-lined cake tin for 50 minutes.
