Sauce (Italian)

A classic Italian sauce recipe.

Ingredients

  • 1 lump Butter (Originally fresh butter.)
  • as needed Mushrooms
  • as needed Onions
  • as needed Parsley
  • 1/2 Bay leaf
  • as needed Flour
  • 1 glass Dry white wine
  • as much Good broth
  • as needed Salt
  • as needed Black pepper
  • as needed Mace
  • as needed bunch Sweet herbs

Instructions

  1. 1In a stewpan, combine the butter, mushrooms, onions, parsley, and bay leaf (cut fine). Cook over medium heat for a few minutes until softened.
  2. 2Shake in a little flour to thicken the sauce.
  3. 3Moisten with the white wine and broth. Add salt, pepper, and mace. Bring to a simmer.
  4. 4Simmer for 30 minutes. Skim off any fat. If desired, add a bunch of sweet herbs while simmering, removing them before serving.
