Sauce for Boiled Cod, and other kinds of Fish

A sauce for boiled cod and other fish, served with mashed potatoes.

Ingredients

  • 1 gill Water
  • as much Milk
  • 2 tablespoonfuls Butter
  • 1 tablespoonful Flour
  • 1 Egg (Boiled)
  • 1 Egg (Raw)
  • as needed Pepper
  • as needed Salt
  • a little chopped Parsley
  • 1 Lemon juice
  • as needed Potatoes
  • 1/4 pint Milk
  • 2 ounces Butter

Instructions

  1. 1In a saucepan, add as much milk to 1 gill of boiling water. Gradually stir in 2 tablespoonfuls of butter while boiling. In a separate small bowl, mix 1 tablespoonful of flour with cold water until smooth. Add this mixture to the saucepan, stirring constantly until the sauce thickens.
  2. 2Stir in the chopped yolk of 1 boiled egg and 1 raw egg, beaten lightly. Remove from heat. Season with pepper, salt, a little chopped parsley, and the juice of 1 lemon. Place the sauce, covered, in a pan of boiling water (but not over direct heat) for 5 minutes, stirring occasionally.
  3. 3Boil potatoes until tender. Peel and mash them. Add 1/4 pint of milk, a little salt, and 2 ounces of butter. Stir well over heat until heated through.
  4. 4Pour part of the sauce over the fish when dished; serve the rest in a boat. Serve the mashed potatoes alongside.
