Sauce for Boiled Cod, and other kinds of Fish
A sauce for boiled cod and other fish, served with mashed potatoes.
Ingredients
- 1 gill Water
- as much Milk
- 2 tablespoonfuls Butter
- 1 tablespoonful Flour
- 1 Egg (Boiled)
- 1 Egg (Raw)
- as needed Pepper
- as needed Salt
- a little chopped Parsley
- 1 Lemon juice
- as needed Potatoes
- 1/4 pint Milk
- 2 ounces Butter
Instructions
- 1In a saucepan, add as much milk to 1 gill of boiling water. Gradually stir in 2 tablespoonfuls of butter while boiling. In a separate small bowl, mix 1 tablespoonful of flour with cold water until smooth. Add this mixture to the saucepan, stirring constantly until the sauce thickens.
- 2Stir in the chopped yolk of 1 boiled egg and 1 raw egg, beaten lightly. Remove from heat. Season with pepper, salt, a little chopped parsley, and the juice of 1 lemon. Place the sauce, covered, in a pan of boiling water (but not over direct heat) for 5 minutes, stirring occasionally.
- 3Boil potatoes until tender. Peel and mash them. Add 1/4 pint of milk, a little salt, and 2 ounces of butter. Stir well over heat until heated through.
- 4Pour part of the sauce over the fish when dished; serve the rest in a boat. Serve the mashed potatoes alongside.
