Rye Griddle Cakes
A simple recipe for rye griddle cakes, perfect for a hearty breakfast.
Ingredients
- 1 pint Rye flour
- 1/2 pint Graham flour
- 1/2 pint All-purpose flour
- 1 tablespoonful Granulated sugar
- 1/2 teaspoonful Salt
- 2 teaspoonfuls Baking powder
- 1 large Egg
- 1 pint Milk
Instructions
- 1In a large bowl, sift together the rye flour, Graham flour, all-purpose flour, sugar, salt, and baking powder.
- 2In a separate bowl, beat the egg. Add the beaten egg and milk to the dry ingredients.
- 3Mix the ingredients until a smooth batter forms. Do not overmix; a few lumps are okay.
- 4Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes, or until golden brown.
