Rye Griddle Cakes

A simple recipe for rye griddle cakes, perfect for a hearty breakfast.

Ingredients

  • 1 pint Rye flour
  • 1/2 pint Graham flour
  • 1/2 pint All-purpose flour
  • 1 tablespoonful Granulated sugar
  • 1/2 teaspoonful Salt
  • 2 teaspoonfuls Baking powder
  • 1 large Egg
  • 1 pint Milk

Instructions

  1. 1In a large bowl, sift together the rye flour, Graham flour, all-purpose flour, sugar, salt, and baking powder.
  2. 2In a separate bowl, beat the egg. Add the beaten egg and milk to the dry ingredients.
  3. 3Mix the ingredients until a smooth batter forms. Do not overmix; a few lumps are okay.
  4. 4Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes, or until golden brown.
